Recipe Wednesday - Chicken, Bacon, Ranch Tator Tot Casserole

 

This recipe gives new meaning to "Tator Tot Casserole". It's even Eric approved *lol* 



2 Cups Cooked, Shredded Chicken (Rotisserie Chicken works well) 
(I thru chicken breasts in crockpot with 1/2 cup chicken broth aka water with Boullion and I sliced up about 1/4 of an onion and thru in there - cooked on low for apx 3-4 hrs. - until I could shred the chicken) 

1 - 32 oz bag Tator Tots
( I use these - Safeway has them they are the only tator tots in my book that will crisp up and they taste good too) 


6 Slices Bacon - Cooked Crispy and Crumbled
(I will use more next time) 

1 Cup Ranch Dressing (or 1 Packet Ranch seasoning mixed with 1 Cup Sour Cream) 

1 Cup Shredded Cheddar Cheese

1 Cup shredded Mozzarella Cheese 

1 Can (10.5 0z) Cream of Chicken soup

1/2 cup Milk

1/2 tsp Garlic Powder 

1/2 tsp Onion Powder 

1/4 tsp Black Pepper

Salt to taste 

In a large bowl, combined the shredded chicken, the cream of chicken soup, milk, ranch dressing, garlic powder, onion powder, pepper and salt and 1/2 the crumbled bacon 

Stir in 1/2 the mozzarella and cheddar cheese until well mixed

Spread the chicken mixture evenly into a greased 9 x 13 baking dish 

Arrange the frozen Tator tots in a single layer over the top of the chicken mixture - sprinkle the remaining cheese and bacon 

Put in preheated oven at 375 degrees - for 35-40 mins - until golden brown & bubbly
