Recipe Wednesday - Almond Poppyseed Bread

 This is one of my family's absolute favorite breads. It honestly doesn't last long around our house when it's made.

 ALMOND POPPYSEED BREAD




 ALMOND POPPYSEED BREAD

3 CUPS FLOUR
2 ½ CUPS SUGAR
1 ½ TSP SALT
1 ½ TSP BAKING POWDER
3 EGGS
1 ½ CUPS MILK
1 CUP plus 2 TBSP OIL
2 TBSP POPPY SEEDS
1 ½ TSP VANILLA EXTRACT
1 ½ TSP ALMOND EXTRACT
1 ½ TSP BUTTER FLAVORING


PRE-HEAT OVEN TO 325 DEGREES. WITH MIXER, BLEND ALL INGREDIENTS UNTIL WELL MIXED. POUR INTO GREASED & FLOURED 9X5X3 LOAF PANS. BAKE 60 MINS. OR UNTIL TESTER IS CLEAN. COOL 10 MINS. IN PAN.


GLAZE:
½ CUP ORANGE JUICE
¾ CUPS SUGAR
½ TSP VANILLA
½ TSP VANILLA
½ TSP ALMOND EXTRACT
½ TSP OIL


HEAT ALL INGREDIENTS UNTIL SUGAR MELTS. PRICK BREAD WITH FORK AND POUR GLAZE OVER WHILE WARM.

Graduation - Explosion Boxes

 Graduation is upon us. I love how these two boxes turned out... I did a step-by-step video but it was over an hour long & I got bored with me *lol* Can't image how bored you all would be *lol* .. I will do another video showing each step but shorten it down .. Hopefully have it posted in the next day or so.

Recipe Wednesday - Lowfat Individual Size Cherry Cheesecake

  If you haven't tried the new craze you need to!!! These individual low-fat Cherry Cheesecake desserts are the bomb and the perfect size!!!



Darla's Version
Layer in jar or small container
1st Layer -
1/2 Grahm Cracker crushed to your consistency liking I did mine fine..

2nd Layer
Wisk Together - - I split this into two containers - it was too much as one for me.
1 individual container of Dannon Light & Fit Vanilla Greek Yogurt - 5.3 oz - You can use 1/2 Cup Plain Greek Yogurt and add vanilla flavoring as well. (DO NOT USE DANNON LIGHT & FIT BLUEBERRY -IT WAS HORRIBLE)
2 Tbls of the dry Zero Sugar or Sugar Free - Jello Cheescake Pudding Mix
I added 2TBLSish of unsweet coconut milk (that's what I had) to thin it out to a better consistency. It gets really thick.
3rd Layer -
Topped off with a couple dollops of Cherry Pie Filling - I used the Ducan Hines Wilderness Country Cherry. Next Time I will use the Simply Cherry Pie Filling because it has a lower fat content and that is what I'm watching strictly. It's almost berry season and any fresh berry would be amazing as well.

I make a couple of these at a time and keep in fridge. Great Sweet Treat !!

Recipe Wednesday - Chicken Enchiladas

CHICKEN ENCHILADAS 

 



I got this recipe years...... ago from a good friend!!  I haven't made them in years. I decided to give it a whirl this weekend, and they were just as amazing as I remember. 


CHICKEN ENCHILADAS

INGREDIENTS

2 - Chicken Breasts
 (I used 3 for more chicken & seasoned with Lawry's and Garlic Pepper) 

2 - 10.5 oz Can of Cream of Chicken Soup

1 - Pint Sour Cream

1 - 4 oz Chopped Green Chilis

Corn Tortillas (I used flour) 

3/4 Cup Chopped Onion

3 C Cheddar & Monterey Jack Cheese 

The recipe has you boil the chicken breasts - remove & chop meat. (I threw in the crockpot, added 1/2 c water with chicken bouillon, 1/4 cup onion quartered - cooked on low for 4 hours & then shredded the meat.) 

Mix soup, sour cream, chilis, onion and meat all together.  Spread mixture on the bottom of a 9 x 12 pan. Heat tortilla's just so they are more pliable. Add a layer of mixture then cheese and roll then place seam side down in pan. Once pan is full use remaining mixture and layer on top and then layer more cheese mixture. 

Bake 25 - 35 mins - till bubbly & brown at 350 degrees.

CENTER STEP FUN FOLD CARD - Perennial Lavender DSP - Mother's Day Card

 I absolutely love how this card turned out.  It's really not that hard but I on the other hand struggled with so many things!!!  Measurements, paper coordination, I was just OFF.. In the video I am a total squirrel. So, if you can bear with the video, it will show you how to do the card and the measurements - maybe just mute me *lol*.   I've listed below the steps to make this amazing fun fold. 


 SUPPLIES & Directions 

Highland Heather Cardstock – I# 146986
Cut cardstock 5 ½ x 8 ½. Place the 5 ½ side of card base into the trimmer with the left edge at the 1 ¼ inch mark.  Move trimmer blade down to the 1-inch mark (don’t cut). Then cut from the 1-inch mark down to the 5 ¼ mark. Then slide card base to the 4 ¼ inch mark & repeat the above step (cut from the 1-inch mark down to the 5 ¼ mark).

Turn card base horizontal with the smaller end to the left. Put the edge on the 1-inch mark and score all the way across. Move to the 2-inch mark score from the outer edge to the cut mark – do on both sides. Repeat at the 5 ¼ inch mark.
Move cardstock to the 4 ¼ inch mark & score from the inside cut mark to the cut mark on the other side.
 
Fold
The small border is the front of the card.  Fold it up (mountain) then next score mark fold down(valley) then up again. Using your bone folder, crisp up your folds. 
 
 Cut Perennial Lavender DSP – I# 162593 - 3 x 1 inch - you will need 2 strips this size. Make sure to watch the way the pattern runs when cutting, so you get it the way you want.
 
I cut the same pattern of Perennial Lavender DSP – I# 162593 ¾ x 5 ¼ for the bottom border. Again, make sure to watch the way the pattern runs when cutting.

Middle Section of Front Card
 
I used Crumb Cake Cardstock- I# 120953 and cut a piece 2 ¾ x 3.
Then I chose a different pattern of the Perennial Lavender DSP – I# 162593 and 
cut it 2 1/2 x 2 3/4. I adhered the lavender to the crumb cake but before I adhered to the card base, I wrapped Linen Thread – I# 104199 around twice - glued it down in the back, then adhered it to the card base.  Made a bow using Linen Thread – I# 104199 and adhered it with a Mini Glue Dot - I# 103683.  I embellished with Purple Fine Shimmer Gems – I# 162611. 

 INSIDE CARD
I picked another pattern from the Perennial Lavender DSP – I# 162593 and cut it
 2 3/4 x 3.  Then cut out a piece of Crumb Cake Cardstock- I# 120953 using the Thoughtful Expressions Dies – I# 162821. I used a Blending Brush – I# 153611 and blended lightly over the top of cardstock with Highland Heather Ink– I# 147103. Then I used a Sponge Dauber - I# 133773 and daubered around the edges darker using the Highland Heather Ink – I# 147103.  Stamped the sentiment "Happy Mother's Day" from the "Perennial Postage Stamp Set - I# 162598 using the Highland Heather Ink– I# 147103. I added a few gems from Purple Fine Shimmer Gems – I# 162611 to complete that portion of the card.  

BOTTOM INSIDE CARD 
I used the same pattern of Perennial Lavender DSP – I# 162593 as I did above. 
 I cut it to 5 1/4 x 4. Then cut Crumb Cake Cardstock- I# 120953 to 5 x 3 3/4. I used a Blending Brush – I# 153611 and blended lightly over the top of cardstock with Highland Heather Ink– I# 147103. I used a Sponge Dauber - I# 133773 and daubered around the edges darker using the Highland Heather Ink – I# 147103.  I adhered it down and then added a couple of our Brushed Brass Butterflies - I# 158136 to complete the card. 

This card really was fun to make.. I just couldn't get my squirrels together *lol*.

Recipe Wednesday - Chicken Fajita Burrito Bowl

 Chicken Fajita Burrito Bowl

I made this for dinner last night.  It was simply amazing!!  I'm starting to think I have a thing for Mexican Food *lol*...  Give it a try you won't be disappointed!! 

NOTE: NEXT TIME I WILL ADD FRESH PICO TO ADD TO THE AMAZING FLAVOR!! 

 

 


Get ready to enjoy a delicious and satisfying meal with this flavorful chicken fajita burrito bowl. Packed with protein and veggies, it's a perfect dish for a quick and healthy dinner.
Ingredients:
1 lb chicken breast, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 tbsp olive oil
1 tbsp fajita seasoning
1 cup cooked rice
1 can black beans, drained and rinsed
1 cup corn kernels
1 avocado, sliced
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Directions:
1. Cook Chicken: In a skillet, heat olive oil over medium-high heat. Add chicken slices and sprinkle fajita seasoning. Cook until chicken is browned and cooked through.
2. Add Veggies: Push chicken to one side of the skillet and add bell peppers and onions. Cook until veggies are tender-crisp.
3. Assemble Bowl: In a bowl, layer cooked rice, black beans, corn, cooked chicken, and veggies.
4. Top with Avocado: Add sliced avocado on top of the bowl.
5. Garnish: Sprinkle fresh cilantro over the bowl.
6. Serve: Serve with lime wedges on the side for an extra burst of flavor. Enjoy your delicious and nutritious chicken fajita burrito bowl!
