Recipe Wednesday!! - Crock Pot Breakfast Casserole

 Recipe Time.... Crock Pot Breakfast Casserole

When I worked at Wilbur Ellis, and we worked on Saturday's I would try to make something for breakfast. This one was loved by all - you could eat it regular or easily throw it on to a tortilla. I'd make it the night before and unplug the crock pot and take in. Easy Peasy!!
Crock Pot Breakfast Casserole
2 cups frozen hashbrowns
1 lb - Breakfast sausage browned and drained
8 oz - Shredded Cheddar Cheese
10 Eggs ( Well this was really affordable a few years ago *lol*)
1/2 Cup Milk
2 oz Green Chilis - Chopped
2 TBLS Minced Onion
1/2 Tsp Salt
1/4 Tsp Pepper
Spray large crockpot with non-stick cooking spray. Place has browns onto the bottom. Layer on top 1/2 the cooked sausage and 1/2 the cheese. Repeat the layers. In large bowl, whisk together eggs, milk, green chilis, onion, salt and pepper. Drizzle over top of sausage and cheese layers. Cook on low for 6-7 hours or until the eggs are set. Serve with salsa, sour cream , tortillas or eat plain. Serves 6-8 people
