Recipe Wednesday - Bang, Bang Chicken

 Recipe Wednesday!! - Bang Bang Chicken Bowl

I've made this several times and I love it. It's very filling..




Yield: 4 Servings

Chicken
1-pound boneless, skinless chicken breast
2 tablespoons olive oil - I used Avocado Spray
Salt, to taste & Black pepper, to taste
I used Kinders Roast Chicken - Kinders Buttery Steakhouse, Garlic Pepper, a little Lawry's

Vegetables
1 cup mixed vegetables (broccoli, bell peppers, carrots)

Bang Bang Sauce - I do the sauce and put in fridge while rest of it cooks
In a small bowl, combine mayonnaise, sriracha, honey, garlic powder, and lime juice. Whisk until smooth. Adjust sriracha or honey to achieve desired spice and sweetness levels.

1/2 cup mayonnaise - I used light Mayo
2 tablespoons sriracha sauce - I added a little more for more spice
1 - 2 tablespoon honey
1 teaspoon garlic powder
1 teaspoon lime juice - I didn't have lime so I put Tajin instead

Cook rice according to package instructions, using a rice cooker or stovetop method. Set aside and keep warm.

Dice chicken breast into bite-sized pieces. Season all sides with salt and black pepper for balanced flavor & seasonings of choice.

Heat olive oil in a large skillet over medium-high heat. Add chicken and sauté for 6–8 minutes until golden and the internal temperature reaches 165°F. Stir occasionally for even cooking.

Add mixed vegetables to the skillet and sauté with the chicken for 2–3 minutes until just tender but still crisp.

Remove skillet from heat. Pour Bang Bang sauce over chicken and vegetables, stirring to coat evenly. Serve over prepared rice. Garnish with extra sriracha or chopped green onions if desired.

Notes
  1. Avoid overcooking vegetables to maintain crisp texture and nutrition.
  1. Adjust sriracha in the sauce for preferred spice level.
  1. Substitute cauliflower rice for a lower-carbohydrate alternative.
  1. Garnish with green onions or sesame seeds for added flavor and color.
