Recipe Wednesday - Snickerdoodle Pumpkin Bread

This recipe was given to me by a friend. I haven't tried it but it sounds amazing!!!

Snickerdoodle Pumpkin Bread


Ingredients

3 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
1 can pumpkin puree
2 cups granulated sugar
1 cup brown sugar, packed
1 cup vegetable oil
4 large eggs
2 tsp vanilla extract
For the Cinnamon Sugar Topping:
4 tsp granulated sugar
2 tsp ground cinnamon

Preheat your oven to 350 degrees and grease two 9x5 loaf pans.

Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg and ginger.

Mix the Wet Ingredients: In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs and vanilla extract. Mix until well blended.

Combine Wet and Dry Ingredients: Gradually add dry mixture to the wet ingredients, stirring until just combined.

Prepare the Cinnamon Sugar: In a small bowl, mix together the granulated sugar and the ground cinnamon for the topping.

Assemble the Bread: Pour half of the batter into the two prepared loaf pans. Sprinkle half of the cinnamon sugar mixture over the batter. Add the remaining batter on top, followed by the rest of the cinnamon sugar mixture.

Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Serve: Slice and enjoy this warm, spiced Snickerdoodle Pumpkin Bread!
Yield: 2 loaves.
