 Recipe Wednesday- Southwest Chicken Salad




This Southwest Chicken Salad is fresh, flavorful, and packed with protein—perfect for a light yet filling meal.
Save this one for your next healthy lunch or dinner!
Southwest chicken salad
Ingredients:
For the salad:
2 grilled chicken breasts, sliced
1 cup black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 avocado, diced
1/2 red onion, thinly sliced (I used white / don't like red)
1/2 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
4 cups mixed greens (spinach, arugula, romaine, or your choice) ( I used iceberg)
For the cilantro-lime dressing: I added at least 2 TBLS of Honey - it was bitter to me at first. And it does taste better once it is chilled.
1/4 cup olive oil
2 tbsp lime juice
1 tbsp honey -
1/2 tsp ground cumin
1 garlic clove, minced
Salt and pepper to taste
Instructions:
Grill chicken breasts until fully cooked, about 6–7 minutes per side. Let rest for a few minutes, then slice thinly.
In a large bowl, toss together the mixed greens, black beans, corn, avocado, red onion, cherry tomatoes, and cilantro.
For the dressing: whisk together olive oil, lime juice, honey, cumin, garlic, salt, and pepper in a small bowl until smooth.
Drizzle dressing over the salad and toss to combine. Top with the sliced grilled chicken.
Serve immediately and enjoy!

Thank You Card

 I have a big order for Thank You Cards for a Bass Club.  I do have some fishing DSP from last year thru Stampin' Up but not enough to do all these cards.  So, I hopped on Amazon and purchased Fishing Scrapbook Paper.  I'm so in love with how these are turning out.  And they aren't hard at all.  Just a basic card and by adding linen thread, embellishments and by daubering around the edges, it has made a plain card into a pretty fantastic looking card.

FUN FOLD - POCKET FOLD - BLOOM IMPRESSION DSP

 I struggle sometimes putting colors together.  Even though the DSP says they belong together, I will question it in my mind.  I questioned these colors, but I really do like them together.  This is a great fun fold card.  Hope you enjoy it!!!

Bloom Impressions DSP - I# 164944
Cut 5 x 3 3/4
Lay the DSP on the Cardstock - measure down 2 inches on the 5 inch side and put a pencil mark on both the DSP and Cardstock - Put the Cardstock into the trimmer with the 2 inch mark on the trimmer edge and the left corner of the cardstock on the trimmer edge as well DO NOT CUT - run the SCORING BLADE - you should get a diagonal fold.  Do the same with the DSP but run the blade so you end up with 2 pieces. Adhere the DSP to the front of the Cardstock.
I used Tear & Tape to adhere the diagonal fold down. You can leave as a flap if you like it that way.  Adhere the pocket to the Melon Mambo using Tear & Tape on the bottom and two sides.

Recipe Wednesday - Mom's "Taverns"

Throw out the Manwich & make this version!!
Mom’s “Taverns"

Serves 6-8: freezes very well!
Estimated time, start to serve: 30 minutes
Ingredients:
  • Bag of hamburger buns
  • 2.5 pounds of ground beef*
  • Salt and pepper, to taste
  • 1 can of tomato soup
  • 1 ¼ cups ketchup
  • ⅓ cup brown sugar
  • 3 Tbsp. chili powder
  • 3 Tbsp. white vinegar
  • 2 Tbsp. yellow mustard
  • 2 Tbsp. Worcestershire sauce
  • 2 Tbsp. honey (or maple syrup)
  • 1 ½ Tbsp. onion powder
  • 1 ½ tsp. celery salt
  • 1 tsp. dry ground mustard; you can just opt for more liquid mustard if you don’t have any
  • Dash of cayenne pepper (optional)
Instructions:
1. Brown the ground beef in a large skillet over medium-high or high heat until there are no more pink pieces remaining. Using a meat-mashing/browning tool like this one is a must for this step, especially if you brown ground beef, sausage, turkey, or chicken often! Drain off the fat and return the rest of the beef to the pan.
2. Season the ground beef with salt and pepper according to your taste preferences.
3. Turn the heat to medium-low. Add all of the other ingredients to the pan and stir well.
4. Let the meat and sauce simmer together for at least 10-15 minutes so the flavors can mesh and the sauce can thicken just a little. When I'm not using the oven or microwave, using an old-school kitchen timer like this one for stove-top meals is insanely helpful. Cover the pan if you have a lid. At this point, you could transfer the meat to a crockpot and keep it on low until you’re ready to serve it.
5. Adjust the seasonings, if desired. At this point, due to the size of the recipe and the size of our family (just the two of us), I usually scoop half of the Tavern meat into a labeled quart-sized Ziplock bag and store it flat in the freezer to pull out for another night. This recipe freezes incredibly well!
6. Scoop Tavern meat onto hamburger buns and enjoy!
